Ye to apko pata hi hai ki bazra ek nutritious grain hai. Ye fiber, protein, magnisium, iron ka rich source hai. In sab ke karan ye health ke liye beneficial hai. Isse diabetes bhi control hoti hai, weight maintain hota hai, cholesterol low hota hai.

Ye apka digestion improve karta hai, apko cancer risk se bhi cure karta hai. Bazra khana bahut logon ko pasand nahi aata. Kyonki hum sabko wheat yani gehun khana hi habitual hai. To chaliye isme yension ki koi baat nahi.

Main apko delicious millets recipes batati hun. Inhe aap jarur like karenge. Apke childrens bhi inko maze se khana chahenge.

1. Bajre ka thepla(बाजरे का थेपला)-

ingredients-

  • 1/12 cup bajre ka atta
  • 1/2 gehun ka atta
  • 1 tsp oil
  • 1 tsp kasoori methi
  • ginger paste 1 stp
  • green chili 2
  • garlic paste 2 tsp
  • coriander powder 2tsp
  • sugar 2 tsp
  • curd atta banane ke liye
  • salt as your taste

Method-

  • sabse pahle bajre ka atta aur wheat atta dono kochaan kar mix kar len
  • ab isme green chilli aur salt mix karen
  • ginger paste bhi add kar len
  • ab isme kasoori methi, dhaniya powder, sugar aur curd daal kar dough bana len
  • ab ise 15 min. rakh den
  • iske baad thode patle paranthe tawe par both side ghee laga kar sek len
  • aapka tasty thepla tyaar hai
  • ise achaar aur chatni ke saath serve karen.

2. Millet ki khichdi-

Ingredients-

  • bajra 200gm
  • moong ki daal 150 gm
  • heeng 1 pinch
  • jeera 1 tsp
  • ghee 2 tsp
  • green chilli 2
  • ginger 1 inch crushed piece
  • haldi 1/2
  • green matar daane 1 small katori
  • salt taste anusaar
  • green dhaniya 1 tsp

Method-

  • sabse first bajre ko chaan, been kar clean kar len
  • ab bajre ko thoda sa paani daal kar geela kar len
  • kuch der baad ise koot len, jisse iski chilka nikal jaye
  • ab cooker me ghee daalen aur garam karen
  • ab isme heeng aur jeera daale
  • jeera bhunne ke baad isme green chilli, ginger, haldi powder, matar daal kar 2 minute bhun len
  • ab is mixture me bajra daale, 2-3 minutes ise bhune
  • ab daal aur bajre ka 4 guna paani daalkar cooker band kar den
  • 1 whistle aane par 5 minutes sim gas par rahne den
  • gas flame off kar den, pressure khatam hone par cooker ka lid open kar len
  • khichdi ko bowl me nikaal kar, green dhanita se topping kren
  • apkigaram-garam bajre ki delicious khichdi ready hai serve karne aur khane ke liye
  • ise aap curd, chatni aur achaar kisi ke bhi saath kha sakte hain\
  • Mujhe to isme shakkar aur ghee daal kar khana bahut pasand hai. Kabhi-kabhi main ise kadhi me bhi mix karke khana like karti hun. Aap bhi ise jarur taste karen aur mujhe batayen kaisi lagi apko.

3. Baja thalipeeth(बाजरे का थालीपीठ)

Ingredients-

  • bajre ka atta 3/4 tsp
  • jwaar atta 3 tsp
  • wheat atta 3 tsp
  • pattagobhi ek kati hui 3/4 tsp
  • 1/4 onion barrek cut kiya
  • green chilli 1 cut ki
  • 1/2 dhania-jeera powder
  • green dhaniya 2 tsp
  • salt taste anusaar
  • 1/1.5 tsp ghee or oil sekne ke liye

Method-

  • ek bowl me saare ingredients mix karen paani ke saath
  • paani itna ki naram dough ban jaye
  • atte ke chote chote gole bana len
  • ab non-stick tawa lekar use oil se chikna kar len
  • ab atte ke gle ko tawe par daal kar apni wet fingers se press karte hue roti jaisa bana len
  • is par oil or ghee laga kar both side se sek len
  • apka bajre ka thalipeeth tyar hai
  • ise garam hi serve karen.

4. Millets roti(बाजरे की रोटी)-

Ingredients-

  • bajre ka atta 500 gm
  • salt as your wish
  • hot water
  • ghee ya makhan

Method-

  • bajre ke aate ko chaan len
  • fir gungune paani se dough bana len
  • ab gas par tawa rakh den
  • dough ko haath se mash kar soft bana len
  • ab ise apne haath ki help se round shape me roti jaise banate jayen
  • apne palmpar thoda gunguna paani lagate rahen
  • both palm ki help se 5-6 inch size ki roti bana len
  • ab ise garam tawe par daalen
  • jab sik jaye to ise palat den
  • agr apko apne haath se roti banane me problem face ho rahi hai to aap polythene ke middle me atte ki loi ko rakhakar belan se bel len. fir softly roti ko lekar tawe par daal den. Both sides se roti ko sek len. Ab is roti par garam garam ghee lagakar serve karen. Iske saath aap gud ya makhkhan bhi kha sakte hain. Ye winters me bahut healthy hoti hai.
  • Aapse request hai ki aap ise taste kar mujhe jarur batayen, ki apko kaise lagi.

5. Bajra chakali(बाजरे की चकली)-

  • bajre ka ataa 1/2 cup
  • gehun ka atta 1/2 cup
  • garlic kisa hua 1 tsp
  • kalonji 1 tsp
  • green chilli paste 1 tsp
  • salt as your taste
  • 2 tsp ghee
  • 1 tsp curd
  • oil fry karne ke liye

Method-

  • Bajre ka atta, gehun ka atta, lahsun, kalonji, green chili paste aur salt inhe mix kar len
  • ab is mixture me ghee bhi daalen aur ise mash karen
  • isme thoda gunguna paani daal kar dough bana len
  • market me chakli ke sanche milte hai, ab is dough ko sanche me press karke daal den
  • ab ise round=round ghuma kar chakli banate jayen
  • ab ek pan me oil garam kar len
  • isme chakliyon ko 1-1 kar daalte jayen
  • aur inhe fry karte jayen
  • inhe thandi kar airtight dibbe me bhar len
  • apki chakli ready hai

6. Millets bade(बाजरा बडे)-

  • bajre ka atta 1.5 cup
  • red chilli poder 1 tsp
  • haldi powder 1/2 tsp
  • dhaniya powder 1 tsp
  • til 1 tsp
  • dahi 1 tsp
  • hara dhaniya 1 cup cut kiya
  • salt taste anusaar
  • oil fry karne ke liye 2 cup
  • paani 1/2 cup

Method

  • बाजरे ka atta bowl me daalen
  • ab isme red chilli powder, haldi, dahi, til salt, dhaniya, hara dhaniya sab mix kar len
  • thoda-thoda paani daalkar aata bana len
  • ab is atte ki small loi bana len
  • haath se inhe chapta kar len
  • oil garam karen, aur inko fry kar len
  • tissue paper par inhe rakh len
  • apke bajre ke bade ready hain, serve karne ke liye
  • inhe chatni aur chai ke khaye aur enjoy karen.

7. Bajre ki raabdi(बाजरे की राबड़ी)-

  • bajre ka atta 2 tsp
  • khatti lassi yani chaach 3 cup
  • ghee 2tsp
  • heeng 1 pinch
  • jeera 1/2 tsp
  • salt taste anusaar

Method-

  • sabse first chaach me bajre ke atte ko salt ke saath mix kar len
  • ek pan me ghee daalkar usme heeng, jeera tadka lagayen
  • ab sim gas par is mixture ko hilate hue pakayen
  • kab mixture thick hone lage to flame off kar den
  • dusre din aap is mixture me thandi chaach mix kar serve karen.
